Introducing SEASON Mode Vacuum Cycling

Our R&D team found that vacuum cycling—repeatedly applying and releasing pressure—marinates food faster than static vacuum sealing. This led to our patent-pending SEASON Mode for our handheld vacuum, which automatically cycles on and off ten times over about 30 minutes, depending on container size and fill level. As a result, your food is perfectly marinated in a fraction of the time of traditional methods.

Safe Plates and the Dinah E. Gore Teaching and Research Kitchens, is NC State Extension’s family of evidence-based food safety programming and resources for retail, community and home-based food safety.

September 2024: Food Safety Specialists at NC State compared three marination techniques: vacuum cycling, static vacuum marination, and traditional marination. Using daikon radishes and red dye as the marinade, the study measured how much color (and by extension, marinade) was absorbed.

Key Findings:

Vacuum cycling, in particular, showed the greatest amount of marinade uptake compared to traditional and straight vacuum method during the same amount of time. Additionally, vacuum cycling resulted in a considerably larger uptake of marinade in shorter duration of time of compared to traditional methods.

How Vacuum Cycling Works
